Place the Oreo cookies in a zip-top bag and crush them using a rolling pin until you have fine crumbs. You should have about 2 cups of crumbs.
In a large bowl, combine the crushed Oreos with the softened cream cheese. Add 1-2 tablespoons of water to help bind the mixture. Mix until you have a consistent, moldable dough.
Using a small cookie scoop or a tablespoon, form the dough into balls about 1 inch in diameter. Place them on a parchment-lined baking sheet and chill in the refrigerator for at least 1 hour to firm up.
In a microwave-safe bowl, melt the green candy melts according to the package instructions. If needed, add a few drops of green food coloring to achieve the desired shade.
Using a small spoon or dipping tool, carefully coat each chilled cake ball in the melted candy. Place them back on the parchment paper to cool and harden.
