In a bowl, combine flour and salt. Add cold cubed butter, using a pastry cutter to work it into pea-sized crumbs. Gradually add ice water, 1 tbsp at a time, until dough forms a shaggy mass. Knead gently on a floured surface until smooth, then chill for 30 minutes.
On a lightly floured surface, roll chilled dough into a 12x8-inch rectangle. Cut into 8 equal strips (1.5x8 inches each). Brush edges with milk to create a seal.
In a bowl, mix ground pork with rosemary, garlic powder, onion powder, salt, and pepper. Divide filling into 8 equal portions, shaping each into a log to fit inside the pastry strips.
Place a sausage log in the center of each pastry strip. Fold the pastry over the filling, sealing the edges. Create a lattice top by cutting strips from leftover dough and weaving them over the rolls.
Preheat oven to 400°F (200°C). Brush rolls with egg wash, then bake for 25 minutes or until golden. Garnish with fresh rosemary before serving.
