Blend soaked cashews with nutritional yeast, maple syrup, apple cider vinegar, and 1/2 cup almond milk until smooth. Set aside.
Place bread slices in a dish and pour enough almond milk to fully soak for 10 minutes.
Spread cashew cheese on each soaked bread slice. Layer banana slices and a drizzle of maple syrup.
Heat a skillet over medium heat. Place sandwiches in the skillet and cook until golden brown on both sides (4-5 minutes each).
Mix cornstarch with 2 tbsp water and 1 tbsp maple syrup. Brush onto sandwiches while hot. Dust with powdered sugar and serve with fresh berries.
