In a large mixing bowl, combine the softened cream cheese, mayonnaise, shredded cheddar, green onions, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, smoked paprika, and black pepper. Mix until smooth and well combined. Chill in the refrigerator for 30 minutes to firm up.
On a parchment-lined baking sheet, roll the chilled cheese mixture into a log shape resemblinging a turkey body (about 12 inches long). Cover with plastic wrap and refrigerate for another 30 minutes to firm.
Remove the log from the refrigerator and gently roll it in the shredded cheddar cheese, pressing the cheese into the surface for texture.
Brush each pretzel stick with olive oil and sprinkle with a mix of smoked paprika and garlic powder. Place them around the cheese log to form a fan shape.
Insert the carrot sticks at an angle for the beak, and place the olive eyes on top. Refrigerate for 15 minutes to set.
Transfer to a serving platter surrounded by crackers and fresh vegetables. Serve immediately or chill until ready to serve.
