Slice sausage into 1/2" diagonal pieces. Set aside.
Cut dough into 48 small rectangles (12 lengthwise x 4 crosswise). This makes 24 breadsticks when folded.
Place 1-2 sausage pieces in each rectangle. Fold dough up from bottom to top, sealing edges with damp fingers or toothpick.
Mix melted butter with garlic, salt, Italian seasoning, and garlic powder.
Add 1/4 cup water to slow cooker. Place stuffed dough in layers, brush with garlic butter. Cook on LOW 4-5 hours until golden.
Serve warm with extra garlic butter or dipping sauce.
