In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Chill for 10 minutes.
In a blender, puree 2 cups of strawberries until smooth. Add a pinch of salt and 2 tablespoons of the puree to the chilled crust to create a thin layer. Chill for 15 minutes.
In a stand mixer or large bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread the whipped cream over the tart, smoothing the top. Decorate with fresh strawberry slices and mint leaves.
Chill for 4 hours or overnight before serving. Let sit at room temperature for 10 minutes before slicing.
