In a small bowl, mix pumpkin puree, maple syrup, cinnamon, ginger, and nutmeg until smooth. Set aside.
In a large bowl, combine oats, walnuts, pumpkin seeds, shredded coconut, and a pinch of salt. Drizzle with coconut oil and stir until evenly coated. Spread on a baking sheet and toast at 350Β°F (175Β°C) for 12-15 minutes, stirring halfway, until golden and crunchy.
Layer the parfait in glasses or mason jars. Start with a spoonful of coconut yogurt, followed by a layer of spiced pumpkin puree, then a handful of toasted granola. Repeat layers, finishing with a dollop of yogurt and a sprinkle of granola. Chill for 15 minutes before serving.
