Rinse lentils and set aside. Wash spinach and chop coarsely. Finely mince garlic and chop herbs.
In a pot, add lentils and 3 cups water. Bring to a boil, then simmer for 15-20 minutes until tender. Drain and set aside.
Heat olive oil in the same pot. Add onion and garlic; sautΓ© 3-4 minutes. Add spinach and cook until wilted.
Add cooked lentils, herbs, nutritional yeast, lemon juice, broth, salt, and pepper. Blend until smooth using an immersion blender.
Transfer to a serving bowl. Garnish with fresh chives and serve warm, adjusting seasoning as needed.
