Preheat oven to 375Β°F. Arrange bread cubes on a baking sheet and drizzle with 1 tbsp olive oil. Toast for 5-7 minutes until golden. Set aside to cool.
In a food processor, combine goat cheese, thyme, lemon zest, remaining 1 tbsp olive oil, honey, Dijon mustard, salt, and pepper. Process until smooth.
Spread goat cheese mixture evenly over each toast. Top with thin beet slices. Sprinkle with crumbled pistachios.
For best texture, assemble crostini just before serving but can be prepared up to 4 hours ahead.
