Preheat oven to 375Β°F (190Β°C). Grease a 9x9-inch baking dish or cast iron skillet with coconut oil.
In a large bowl, toss apple slices with maple syrup, lemon juice, cinnamon, nutmeg, and salt. Pour into prepared baking dish.
In another bowl, mix almond flour, shredded coconut, melted coconut oil, maple syrup, vanilla, cinnamon, and salt until crumbly. Sprinkle over apple mixture.
