Toss beet cubes with 2 tbsp olive oil, salt, and pepper. Roast at 400°F (200°C) for 10 minutes.
Whisk together remaining 2 tbsp olive oil, red wine vinegar, honey, orange zest, orange juice, salt, and pepper.
