Add buttermilk, vegetable oil, eggs, and remaining 1½ teaspoons vanilla extract to the dry ingredients. Mix on medium speed until smooth.
Carefully stir in boiling water until fully absorbed. The batter will be thin—this creates a moist crumb.
Divide batter evenly between prepared pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely. Prepare buttercream by beating butter until fluffy.
