In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, cream butter and sugar until light. Beat in egg, milk, and vanilla. Gradually add dry ingredients until dough forms.
Divide dough into two discs. Roll out to 1/4-inch thickness on parchment paper. Cut with leaf-shaped cutters and place on parchment-lined baking sheets.
Bake at 375Β°F for 8-10 minutes until edges are golden. Let cool completely before decorating.
In a bowl, mix 1/2 cup powdered sugar with 1 tbsp milk and 1/2 tsp vanilla. Divide into small bowls and add food coloring. Let kids pipe icing and add sprinkles.
