Wash sweet potato and pat dry. Thinly slice using a mandoline or sharp knife. Remove kale stems and tear leaves into 2-inch pieces.
Toss sweet potato slices with ½ tsp paprika, ¼ tsp salt, and pepper. In a separate bowl, toss kale with remaining paprika and salt.
