Heat the olive oil in a large skillet. Cook onion 3-4 minutes until softened. Add garlic and cook 1 minute.
Add chicken to skillet and stir with onion/garlic mixture. Transfer to crockpot.
Add tortellini, spinach, tomato sauce, soup, broth, spices and bay leaf to crockpot.
Cover and cook on low for 6-8 hours (or high for 3-4 hours).
Before serving, remove bay leaf but leave remaining soup.
