Trim and halve Brussels sprouts, discarding brown outer leaves. Place in a large bowl.
In a small bowl, whisk together maple syrup, both vinegars, garlic powder, paprika, salt, pepper, and ΒΌ cup of the olive oil.
Add remaining olive oil, chopped almonds, and glaze to the sprouts. Toss well to coat. Spread in a single layer on a parchment-lined baking sheet.
Bake at 425Β°F for 25-30 minutes, tossing halfway, until golden and crispy.
Stir in nutritional yeast (if using). Transfer to serving dish and garnish with additional almonds and balsamic reduction.
