Place cocktail shaker, jigger, or muddler in freezer for minimum 10 minutes to maintain cold. This crucial step keeps citrus from warming during preparation.
Gently muddle 1 sprig of rosemary in base of jigger. Be careful not to over-muddle - we want subtle aromatic qualities, not overpowering herbal flavors.
Combine grapefruit juice and bitters in chilled glass. Pour over crushed ice up to 3/4 full. The sparkling water will naturally chill the preparation.
Add remaining rosemary sprigs to glass stems. Pour in sparkling water gently to avoid over-mixing delicate aromas. Add crushed ice to top and gently swirl to blend.
