Sift almond flour, powdered sugar, baking powder, and salt into a bowl. Set aside.
Using an electric mixer, whip egg whites until soft peaks form. Gradually add granulated sugar and vanilla extract, beating until stiff, glossy peaks form.
Gently fold the dry ingredients into the egg whites in three batches until smooth. Add pink gel food coloring and mix until evenly colored.
Transfer batter to a piping bag. Pipe 1-inch rounds onto baking sheets. Tap sheets firmly on a counter to remove air bubbles. Let rest 30 minutes, then bake at 300°F (150°C) for 15-18 minutes.
Whip heavy cream until stiff peaks form. Chill until ready to use.
Pipe a dollop of whipped cream onto half the macarons. Top with a marshmallow, then the remaining macaron shell. Use white chocolate chips to create snowman faces and add sprinkles.
