On a floured surface, roll dough to 1/4-inch thickness. Use a round cookie cutter to cut dough into circles. Place on parchment-lined baking sheets, spacing 2 inches apart.
Preheat oven to 375°F (190°C). Bake for 8-10 minutes until edges are lightly golden. Let cool completely before adding icing.
