In a small bowl, combine ground turkey, sour cream, parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
Take a small portion of the cheese ball mix (about 1 tablespoon) and flatten into a disc. Place a heaping teaspoon of the turkey mixture in the center.
Wrap the cheese ball around the turkey mixture, pinching the edges to seal completely. Roll in the instant pretzel coating to coat evenly.
Place finished cheese balls on a parchment-lined baking sheet. Refrigerate for at least 30 minutes to set. Serve chilled with cranberry sauce, apple slices, or your favorite Thanksgiving dippers.
